Fruit Stuffing

Ingredients:

  • 1/2 loaf rudi’s multi grain sandwich bread, thawed and cut into chunks - 8 large slices
  • 2 small apples, peeled and cored and cut into chunks.- 150g of chunks
  • 1/2 cup natures harvest buttery flavoured margarine - 120g
  • 1/2 cup raisins 60g
  • 1/2 cup dried cranberries - 60g
  • 1/2 tsp ground allspice (or 1/2 tsp cinnamon and a pinch clove)
  • 1/2 tbsp ground sage
  • 1/2 tsp ground rosemary
  • 1 tbsp dried thyme
  • 1/2 tsp salt

Directions:

  1. melt the margarine in a medium pot
  2. add the apple chunks, dried fruit,herbs, spices and salt to the pot cook until the apple chunks are soft - around 10-15 minutes
  3. put the bread chunks in a large bowl, add the apple mixture and mix thoroughly

(Note that it is not as good with fresh cranberries)
